Burr Grinders crush the coffee beans between a moving grinding wheel, and a non-moving surface.  There are two different types of burr grinders - The Wheel Burr and The Conical Burr, with the Wheel Burr being the less expensive of the two.

The Wheel Burr spins very fast, making it slightly noisy; and since it rotates at a higher speed, it can be messy as well.  The Conical Burr is the best you can buy.  It can be used on flavored and oily beans and won't clog.
